Avocado Eggs: Your healthy start to Easter day

Swap chocolate eggs for this interesting and satisfying avocado egg.  Avocados contain a rich supply of vitamins, twice as much potassium as a banana and they are rich in omega fatty acids to keep skin youthful and hair luscious. Try to eat them four times a week for younger-looking skin, nails and hair.

Avocado Eggs

What you need:

1 avocado

2 small eggs

2 rashers of bacon, grilled

A sprinkling of chilli and black pepper

 

 

Method:

Remove the stone from the avocado and scoop out enough flesh to hold the raw egg.

Take a small slice off the bottom of the avocado so it sits firmly on the plate without rocking.

Crack the egg into the centre of the avocado.

Blast for 30-second intervals in the microwave for 2 minutes, turning the plate each time so the egg cooks evenly.

Sprinkle with chilli and black pepper and scatter the cut-up bacon on the side.
